Best for making YEAST-LEVEANED BREADS: english muffins, ciabatta, sweet rolls, sandwich bread, focaccia, pizza crust, brioche, and sourdough. Flour will be milled fresh on day of pick-up/delivery.
This flour offers the benefits of higher protein content for stronger dough, increased fiber for digestive health, and preserved nutritional value. It has a robust, nutty flavor. The bran and germ are included in this flour, making it more nutritious but interfering with gluten development. The dough will require more water and longer kneading time to compensate.
For maximum nutritional benefit use as soon as possible, or store in an airtight container in the freezer until needed.
